Honey Glazed Chicken & Waffles

Waffles: Beat the egg whites until they have doubled in size and gained a stiff consistency. Whisk in the whole egg, vanilla and 2 tbsp honey. Add in the dry ingredients: almond flour, baking soda, and salt. Heat the waffle iron, pour in the batter and cook until the outside of the waffle is golden brown, around 3 minutes.

Chicken: Heat pan with a little olive oil and begin heating. Place chicken breasts and begin to brown. Add in diced peppers and minced garlic, saute for about 5 minutes, searing the peppers and continuing to cook chicken. Add in the honey, lime juice and soy sauce, add just enough water to thin out the honey a bit, then cook until the sauce reduces enough to become a syrupy glaze, about 7 minutes Place Chicken on the waffles and drizzle with extra sauce, and if desired a little bit of extra honey.
